I have uploaded OS11 to the UMS and it’s in the Universal Firmware Update and shows as Finished OK, however when I create profiles or go to change ones based on the OS version 11.06.250 isn’t an option?
You have to install a system using that OS version first…
Another option it to import firmware profile from another UMS system…

Exactly, you need to install or update a device to latest version for create profiles with it or modify their “Based on…” field.
I exported a profile from another UMS and imported it to this one I’m having issues with and it too only has the options for OS 10 firmware and when I go to edit the profile as it was specifically for Chromium it doesn’t show any blue highlighted sections as it should and chromium isn’t available in it
What version of UMS?

The new UMS will either need a client installed to it or the profile firmware from here imported into it.
